1 onion diced
6 cloves of garlic, minced
1 tbsp coconut or olive oil
2 cans of coconut milk [here or here]
2 (14 oz) cans of diced fire roasted tomatoes [here or here]
4 tbsp red curry paste [here or here]
4 tbsp liquid aminos [here or here]
1 large sweet potato or squash, cubed
1 carrot, diced
1/2 head of cauliflower, diced
1/2 pound brussel sprouts, quartered
1 cup of spinach
1 pound of ground beef
Heat onion and garlic in oil in a large pan.
Once they are translucent, add coconut milk, tomatoes, curry paste and aminos.
Bring this to a boil, then reduce to a simmer.
Add sweet potatoes and cook for 6 minutes.
In a separate pan, brown the ground beef.
Add carrot, cauliflower and brussel sprouts and cook for 6 minutes.
Add the browned ground beef and spinach.
Serve on its own or over rice.
