Mug Cake

Everyone needs a sweet treat once in a while! If you want a quick snack after dinner or maybe mid-afternoon, try a mug cake! Its simply to make and can be paleo or vegan friendly! I even like to add in a few superfoods to boost the goodness!!

Cooking Time

2-5 minutes (depends on your microwave)

Ingredients

1/2 banana

2 tbsp butter or coconut oil (for paleo/vegan)

2 tbsp peanut butter or almond butter (for paleo)

2 tbsp coconut milk or almond milk

2 tbsp maple syrup (or less to taste, can also be left out if you prefer)

2 tbsp cassava flour

Optional add in: a half scoop of collagen peptides and 1/4 tsp camu camu powder

1 MUG :)


Directions

1. Put the banana in the mug and mush it with a fork.

2. Mix in the rest of the ingredients one at a time *flour last.

3. Put it in the microwave for 2 minutes. Continue to microwave for 30-60 seconds at a time until its set. This will depend on the strength of your microwave. My perfect mug cake is about 3.5 minutes, but we have an OLD microwave.

(Remember there's nothing that can't be eaten raw, so if its not cooked through, no worries. It might even have a better texture that way)

4. Allow to cool a bit and ENJOY!
